Ingredients

  • Rolled oats - (old-fashioned oats) tend to hold their shape better than quick oats when baked. While some recipes blend the oats, I personally prefer keeping them whole because it enhances the texture significantly.
  • Sweetener - I like to use maple syrup or date syrup. But for my son I like to make a healthier version with date paste or apple sauce instead. Choose the ripest, full of brown spots bananas for this, the oatmeal will naturally taste sweeter!
  • Baking powder gives baked oatmeal a light, fluffy texture.
  • Blueberries - you can use blueberries, diced apples, strawberries, or any fruit you prefer in your baked oatmeal. Fresh or frozen both work well for a burst of fruity flavor.
  • Bananas - overripe bananas=sweet & flavorful baked oatmeal.
  • Milk - use whatever milk you use to make oatmeal porridge. To make dairy-free baked oatmeal, just use almond milk or another unsweetened plant milk. I love vanilla almond milk here!
  • Mix-ins - feel free to add extra nutrition with chopped nuts, shredded coconut, or for a sweeter tooth some chocolate chips. About ½ cups of one option.

Variations

  • Baked Oatmeal with Apples. Use apple sauce instead of bananas and swap the berries for this cinnamon apple filling or fried apples.
  • Chocolate Chip Oatmeal. Add a generous handful of chocolate chips instead of fruit.
  • Raisin Baked Oatmeal. Add raisins or cranberries instead of fresh fruit. Try my cranberry overnight oats next.

Freezing And Storing Instructions

  • To Store. To store leftover baked oatmeal, refrigerate it for 5 to 7 days either in the baking pan or in an airtight container.
  • To Freeze. You can store the whole pan or wrap individual slices and place them in an airtight container or freezer bag. Baked oatmeal freezes well for up to 3 months, providing a convenient heat-and-eat breakfast option.
  • To Reheat. Warm the oatmeal in a 350°F oven until warmed through, or simply heat individual bars in the microwave.

INGREDIENTS

  • 2 medium bananas, mashed
  • 1 ½ blueberries
  • ¼ cup maple syrup
  • 1 cup old fashioned oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 1 cup milk, any
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • lemon zest from one large lemon

INSTRUCTIONS

  • Preheat oven to 375°F (190°C) and grease a 9-inch square baking dish (I used 9x8 dish). You can spray the dish but it is not that important.

  • Mash the bananas in the baking dish and add remaining ingredients. Mix to combine. Reserve about half a cup of berries for topping.

  • Bake for 55 minutes to an hour until the top is golden brown. Remove the baked oatmeal from the oven and let it cool for 10 minutes in the pan before slicing.

  • Serve warm with your favorite toppings, or enjoy as-is. Enjoy your delicious baked oatmeal!
